The “Local Organic Samsø” innovation is designed to overcome weak market integration and break the island’s dependence on imported food by establishing direct pathways between local organic producers and professional kitchens. While local fields grow a highly diverse array of 118 crop types, public canteens, schools, and restaurants traditionally perceive organic procurement as complicated, expensive, and logistically burdensome.
The initiative builds on the opportunity offered by Denmark’s Organic Cuisine Label, encouraging restaurants and other professional kitchens to make greater use of local organic produce. By engaging culinary trendsetters, the initiative aims to inspire other businesses to embrace organic, seasonal menus. Linking organic certification with Samsø’s local food and farming identity in a communication campaign can make organic sourcing more attractive while strengthening the market for island producers.
Beyond marketing, the initiative seeks to facilitate stronger relationships between local organic producers and professional kitchens. Through producer mapping, networking events, workshops, and knowledge exchange activities, the Living Lab helps farmers and chefs connect directly and develop practical collaborations that fit their respective needs and capacities. Rather than acting as an intermediary coordinator, the initiative aims to create conditions that enable producers and buyers to establish their own sustainable supply relationships. This approach helps make local organic sourcing more visible, accessible, and attractive, while supporting the broader ecological transition of Samsø’s food system.
